I made a black bean soup about seven years ago and it was so labor intensive I haven’t done it since. So when I saw this recipe that involved just dumping beans in a Crock Pot, I was sold. No soaking required. I did all the prep work yesterday and let the beans cook through the evening.
So all I had to do today was puree some of the beans and heat everything up. The recipe calls for toasting cumin seeds and adding to creme fraiche but I was not feeling that fancy, so I just topped each bowl with sour cream and some good bread.
All bowls were empty.
Turtle loved dipping her bread in it. She even dipped in some carrots. Word of warning, eating this soup with a 1.5 year old is not for the faint of heart.
