My husband has a love of bacon so intense we have considered calling Intervention. He also really likes pesto, so when I saw this recipe for Baked Gnocchi with Pesto, Peas and Pancetta, it was kismet. It goes like this: boil gnocchi for just a couple minutes,
make rue with butter and flour, add milk and freshly ground nutmeg,
toss in pancetta, peas, pesto and gnocchi,
put in casserole dish, top with grated fontina and bread crumbs and bake until bubbly and golden.
Yeah, it’s good. Really good.
