the (supposed to be) perfect omelette

I love omelettes but I’m not very good at making them. Mine always start getting too done on bottom before the eggs are set. I saw a tutorial on The Kitchn last week so I tried it this morning.

You mix up your filling in advance and get butter nice and hot in the pan. Then, once the eggs are in the pan, they get a vigorous stirring before leaving alone to set.

My omelette, filled with ricotta, pancetta and goat cheese, was delicious and perfectly cooked. Not so much perfectly shaped. Oh well. One thing at a time.
