baked shrimp with lemon and olives

Best laid plans and all… I knew I had shrimp in the freezer. What I forgot was that they were those tiny little non-shrimp that are usually used in salad. So what could have been a delightful supper was instead okay. Totally my fault and not the recipe’s.

One thing it did was remind me of the beauty of couscous. Boil water, put on lid, set aside. Can’t get easier than that. And I do love olives. No one else in the family does, so that means more for me.

I will definitely make this again, with actual shrimp next time.
