a good day

Pancakes,

 

pizza,

 

board games and popsicles.

 

With a healthy dose of home improvement in between that means I feel this morning like I was hit by a truck.

Mississippi Pancakes (from the New York Times Cookbook by Amanda Hesser)
Ingredients:
2 large eggs
1 cup milk
3 tablespoons butter, melted
2 tablespoons vegetable oil
1 1/4 cups plain flour
1 tablespoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
Method:
Whisk eggs in a small bowl until frothy, then add milk and melted butter. In a separate bowl, mix dry ingredients, then whisk into egg mixture. Cook on generously buttered griddle or pan until air bubbles cover the surface. Flip, without a turner if you’re awesome like me. Arrange into Mickey Mouse and cover with syrup. Watch as your kid eats three bites and declares herself full. Wonder why you bother.
