fresh corn risotto

I don’t think there are many things more satisfying in the kitchen than risotto. Sure, it’s laborious, what with all the stirring, but it’s so worth it. I actually enjoy the process and really, it doesn’t take all that long.

 

This version is from Melissa Clark at Food and Wine. Trust me, you need to make some. I added balsamic vinegar to the top because, well why not? Perfection.
